Sweet Pepper and Heirloom Tomato Gazpacho

Ingredients

2 sweet peppers
3 medium heirloom tomatoes
1 small cucumber
1/2 yellow onion
4 cloves garlic
cup parsley
red wine vinegar
1/4 cup olive oil
Salt and pepper

Preparation

1
Combine all ingredients in a food processor or blender. Blend until puréed. If using a blender, pour through a fine strainer. Chill or serve immediately.
