Poached Fish In Wine Sauce

Ingredients

4 Fresh walleye fillets
Salt to taste
Freshly-ground black pepper to taste
1/4 cup Sliced green onions
1 teaspoon Margarine
1 cup Water
2 tablespoons Dry white wine
1/2 cup Sour cream
1/4 pound Fresh mushrooms
Paprika to taste
Parsley sprigs for garnish

Preparation

1
Sprinkle the walleye fillets with salt and pepper. Put them in aluminum foil about 18 inches square, bring opposite ends of the foil together and seal securely. Put foil package seam side up in a baking dish, bake at 450 degrees for about 30 minutes or until the fish flakes easily with a fork.
2
In the meantime, cook green onions in margarine about 5 minutes in a sauce pan. Stir in chicken gravy mix, then slowly add water, stirring and blending the mixture together. Cook and stir until bubbly.
3
In a cup mix together white wine and sour cream. Cut up mushrooms, and add to the gravy mixture along with sour cream and wine. Mix thoroughly, but do not let it boil.
4
With the spatula remove the fish from the foil, and spoon the sauce over the fish. Sprinkle with paprika and garnish with sprigs of parsley.
