Roasted Fingerling Potatoes

Ingredients
2 pounds fingerling or red potatoes cut into bite sized chunks
1/2 cup olive oil
3 stalks green onions, sliced (optional)
Preparation

Place baking sheet in oven and preheat oven to 450 degrees (This will help prevent sticking and help brown cut side of potatoes).

If not using green onions, bake for a total of 45 minutes.
