Grilled Banana Compote
Ingredients
2 inches lrg Unpeeled bananas, cut half
1 teaspoon Vegetable oil
1 tablespoon Unsalted butter
1/4 cup Brown sugar
1/4 cup Dark rum
Splash Grand Marnier
1 teaspoon Ground cinnamon
1/2 teaspoon Ground ginger
Orange zest, for garnish

Rub the cold grill rack with oil, and light coals or start grill. Brush bananas with vegetable oil and grill for 2 to 3 minutes. Remove from the grill, peel, and cut into medium-size pieces. In a medium-size saute pan, heat butter until bubbling. Add brown sugar and bring to a boil. Add banana pieces and rum. Splash with Grand Marnier. Boil for about 1 minute.
