Tomato and basil omelette
- 4 eggs
- 2 tomatoes
- 2 spoons of olive oil
Blanch the tomatoes in boiling water and peel, remove seeds and cut tomatoes into small pieces. Add salt, pepper, basil and fry in 1 tablespoon of olive oil for about 2 minutes
Beat 4 eggs, pour it into the pan with the fried tomatoes. Simmer over low heat to congeal eggs and tomato. After putting omelette on a plate sprinkle it with a few drops of olive oil and pinch of basil.
