Banana Muffins
Ingredients
1/4 cup creamy peanut butter
1/4 cup light brown sugar
2 large eggs
3 large ripe bananas, mashed
1 cup whole-wheat flour
1/2 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon vanilla extract
3 squares unsweetened baking chocolate, chopped finely

Preheat oven to 350 degrees F. Line a 12-cup muffin pan with paper liners.

In a medium bowl, combine peanut butter, brown sugar, and eggs.

Add mashed bananas and mix well.

Fold in flours, baking soda, salt, and vanilla until just combined.

Add chopped chocolate. Be careful not to overmix the batter, or the muffins will be tough.

Scoop batter into muffin liners and bake for 20-25 minutes or until the tops are golden brown.
