Simone's Russian Salad

Ingredients

1 small can green peas (e.g. Leseur brand petite pois)
1 pound can whole small beets, cut up

Preparation

Boil the potatoes, eggs, and carrots until just cooked through; do not overcook.

Rinse these vegetables with cold water and dice them.

Combine cooked vegetables with canned peas, beets, and the onion.

Stir in the oil, vinegar, salt and pepper gently to coat all the other ingredients.
