"Cheese Bouquet” Muffins

Ingredients
1 tablespoon cup+ 1 finely shredded cheese, divided
1 tablespoon cup+ 1 finely shredded Parmesan
1 tablespoon cup+ 1 finely shredded blue cheese
2 1/4 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons extra virgin olive oil
Optional:
1 tablespoon cup+ 1 finely shredded white cheese
Preparation

Preheat oven to 350° F (180 ° C)

Place each of the tablespoons cheese in a small bowl and set aside.
