Basic Dough For Zatar Or Meat Pies Or Spinach

This flour has gluten in it and makes for a soft silky dough.

Dissolve yeast in 1 cup of the water and add a dash of sugar to it. Set aside. Rub oil into remaining dry ingredients evenly. Add yeast and the rest of the water gradually. Knead the dough until a soft silky ball of dough is formed. Sometimes, depending on the weather, not all of the water is necessary. cover, and let it triple in bulk. Ball the dough out to whatever size is required, cover with plastic and let it rest for a few minutes.
