Vegetarian Chilli Con Carne

Ingredients

3 tablespoons Olive Oil
1 large Onion, chopped
1/2 teaspoon Chilli Powder
1 teaspoon Ground Cumin
1 teaspoon Ground Cinnamon
2 teaspoons Dried Oregano
3 teaspoons Cocoa Powder
2 cups Water
2 tablespoons Molasses
1 cube Vegetable Stock
4 tablespoons Tomato Paste
500 grams Kidney Beans, cooked

Preparation

Saute chopped onion until soft.

Add chilli, cumin, cinammon, oregano and cocoa fry for 1 minute.

Add all other ingredients with the exception of 250g of the kidney beans and bring to a simmer.

Mash ingredients.

Add remaining kidney beans.

Simmer for 3/4 an hour stirring occasionally.

Serve with rice or corn chips.
