Green Tomato Ratatouille

Ingredients

6 tablespoons olive oil
1 pound green tomatoes, very coarsely chopped
1 tablespoon salt
1 large green pepper, seeded, coarsely chpd
1 teaspoon black pepper
3 large garlic cloves, minced
1 pound white onions, coarsely chopped
1 tablespoon minced fresh basil or ½ t dried
1 3/4 pounds ripe tomatoes, coarsely chopped
1 pound zucchini, cut into medium-thin rounds

Preparation

Heat oil in large skillet and add green tomatoes, green pepper, garlic and onions.

Saute, stirring lightly, until vegetables are wilted (7-8 min).

Add ripe tomatoes and zucchini.

Cook until zucchini is tender and tomatoes have given up a lot of liquid.

Add seasonings and mix carefully.

Continue to simmer at higher heat, stirring lightly, until most of liquid has evaporated and what is left has thickened.

Keep scraping from bottom to keep from scorching and sticking.
