Eggplant Rice Medley
Ingredients
2 cups water
1 chicken buillon cube
1/4 eggplant, chopped
1 small white onion
5 white button mushrooms, sliced
1 teaspoon ground black pepper
1 clove garlic, chopped
Preparation

Preheat oven to 350 degrees fahrenheit

Spray casserole dish with cooking spray

Add uncooked rice and water

Add buillon cube

Add onion, mushrooms, and eggplant

Add garlic and black pepper

Cook for 30-45 minutes.

About
My girlfriend and I have been counting calories for a week or so now. I have tried to make up recipes that use lots of vegetables and little carbs. I initially bought the eggplant to make my mini eggplant "pizzas" which I have a recipe listed on foodista.com for, but decided to make this rice instead. It turned out perfectly, even my girlfriend, who let's be honest, is kind of finicky, LOVED it! I would def. make this rice again and it went great with baked chicken tenders and the organic pinto beans I served alongside.
