Otherwise, to make in advance to serve as a party appetizer or a quick snack:

Spread cream cheese over a length of smoked salmon. Drag a ribbon of the dijon mustard down the center of the cream cheese, and top with 3 or 4 capers. Next, lay the fresh herbs (Dill or Fennel sprigs) across the middle of the length of salmon, in a cross or "T" formation.

Starting with the widest end of the salmon strip, begin rolling up toward the thinner end. Seal the roll shut with a dab of the cream cheese. Stand the roll up, with the herbs popping out of the top!
