Fast-Disappearing Feta Dip

Ingredients

1 cup fresh crumbled feta
2 tablespoons sour cream
1 tablespoon minced garlic
1 tablespoon parsley, dried is fine
1 tablespoon basil, dried is fine
salt and pepper to taste

Preparation

Add cream cheese, feta cheese, sour cream and garlic to a blender or food processor.

Pulse to combine.

Add parsley and basil.

Pulse again.

Add olive oil, salt and pepper.

Blend until everything is well mixed.

Put in a vessel.

Serve and enjoy.

This recipe was born out of the need to use up leftover ingredients. I had a little sour cream and a little feta that I did not want to go bad. Once I decided on a dip, I brought the cream cheese into play. Then I just added my favorite herbs. It was a simple as that. The reaction to this dip was incredible. My mother-in-law and I polished a bowl of it off ourselves! I have made it numerous times for many occasions, and it always gets great reviews. My husband and I also love to spread it on our homemade burgers.
