Plum Pork Roast

Ingredients

3 pounds pork Roast
1 17-oz. can pitted plums with syrup
1 red onion, coarsely chopped
1 teaspoon dry mustard
1 teaspoon ground ginger
6 ounces can concentrated frozen lemonade
1 tablespoon soy sauce

Preparation

Place roast at the bottom of the crock-pot. Puree plums in a blender and add onions, dry mustard, ginger, lemonade and soy sauce. Pour over roast and cook in the crock pot on low for 4 - 5 hours or until pork is fully cooked. Slice pork and serve with plum sauce from the crock pot.

Chefs Notes: The sauce is really just a cooking marinade. You can cut out some calories by taking it easy on how much plum sauce you spoon on your pork
