Ingredients
5 lbs. lean
hamburger
5 heaping tsp. Morton Tender Quick
salt
2 1/2 teaspoons
mustard seed
2 1/2 teaspoons coarse
black pepper
2 teaspoons
garlic
salt
1/2 teaspoon
fennel
2 teaspoons
onion
salt
1 teaspoon
hickory
salt
(smoked)
Preparation
1
Mix
once a day for 3 days. Keep covered and
refrigerate.
On the 4th day, form into 2 compact
rolls.
Place on broiler pan.
Bake
4 hours at 175-200 degrees.
Turn
roll
2 times while
baking
