Freshly made mango salsa

3 ripe mangoes
1 medium red pepper, finely chopped
1 hot pepper, chopped
1/2 red onion, chopped
80 ml (about 1/3 cup) juice of 1 - 2 limes
1/2 tsp coriander, ground or 15 g (1/4 cup) fresh coriander leaves, chopped
1/4 tsp salt
1/4 tsp pepper
1 tbs of erythritol
15 ml (1 tbs) apple or wine vinegar
30 ml (2 tbs) olive oil
1 tsp curry powder

Peel the mango, remove the stone and cut it into smsll cubes.
Combine the prepared mango and other ingredients in a serving bowl and mix them well.
For best flavor, let the salsa rest for 10 minutes or longer before serving.

Definitely try to make this unique salsa. If you don't like it hot, leave out the  peppers. It will still be delicious. It's easy to make, sweet, spicy and absolutely delicious. Serve it with chips, in taco shells, as a side dish to fish and rice. I usually make it with fish and rice.
