Pork Burgers with Gingered Rice and Sweet Potato Fries
Ingredients
For the Burgers:
2 lbs. of boneless pork loin – cubed
Handful of fresh Italian parsley
3 tablespoons of grated Romano cheese
Dashes of salt
Dashes of black pepper
Olive oil for drizzling
For the Gingered Rice:
2-3 inch piece of fresh ginger – peeled and finely chopped
Handful of fresh Italian parsley – chopped
4-5 cloves of garlic – chopped
1 large onion – sliced
1 quart of button mushrooms - sliced
3-4 tablespoons of soy sauce
2-3 tablespoons of hot sauce
Dashes of salt
Dashes of black pepper
1 cup of uncooked rice
Olive oil for drizzling
For the Sweet Potato Fries:
3 large sweet potatoes – peeled and sliced into fries
Dashes of Salt
Dashes of Black pepper
Olive oil for drizzling
Preparation

For the Burgers:

Place the cubed pork in a food processor, along with the seasonings, grated cheese and fresh parsley. Give a few good chops and form into burgers.

Heat a large frying pan with a drizzle of olive oil and add the burgers. When the burgers are golden on one side gently flip and finish cooking on the other side.

For the Gingered Rice:

Place in a large bowl the ginger, mushrooms, onions, garlic, parsley, salt, pepper, soy sauce and hot sauce; toss and let stand.

Prepare the rice as directed.

Heat a large frying pan with a drizzle of olive oil and add the marinated mushroom mixture. Sauté until fragrant, add the rice and continue to sauté for a minute or two.

For the Sweet Potato Fries:

Preheat the Oven 375 degrees:

Place the sweet potato slices in a bowl. Drizzle with a little olive oil; add the salt and pepper and toss.

Place on a baking pan and bake until golden on one side. Turn the potato slice over and continue baking. About 15-20 minutes on each side.

Place on a paper bag or towel to drain.
