Chinese Spicy Eggplant With Ground Pork

Ingredients

2 teaspoons vegetable oil
1/2 pound ground pork
2 teaspoons soy sauce
3 teaspoons black bean paste with chili
1 teaspoon rice vinegar
1/2 teaspoon sugar
1/2 cup soup stock
2 teaspoons sesame oil
chopped green onions for garnish

Preparation

Heat wok and add 2 tablespoons oil

Add pork and stir fry for 2 minutes

Add eggplant and all remaining ingredients except sesame oil

Cover wok, bring to boil and simmer until eggplant is tender

Transfer to serving dish and sprinkle chopped green onions on top
