Pumpkin Fritters

Ingredients

2 cups cooked Pumpkin, crushed coarsely
1 1/2 cups Flour
2 teaspoons Baking Powder
1/8 teaspoon Salt
1/2 cup Whole Milk
1 tablespoon Melted butter
1/4 teaspoon Vanilla Essence
3 tablespoons Brown Sugar
1/4 teaspoon Powdered Cinnamon
Oil for deep-frying

Preparation

Sift flour, baking powder, cinnamon and salt.

Beat eggs until fluffy

Add beaten eggs, melted butter, vanilla essence and milk to dry ingredients

Beat with a fork until smooth

Stir in crushed pumpkin and add more milk if needed

Batter should be of a dropping consistency

Use a tablespoon to drop batter into preheated deep fat

Fry for 4 - 5 minutes or until golden brown.

Pumpkin Fritters are delicious served hot or with dip. Makes a nice side to any dish. Can be used at Breakfast, Lunch or Dinner time.
