Split Pea Soup With Caramelized Onions

Ingredients

1/2 teaspoon dried basil
2 cups water
2 cups broth
1/2 teaspoon cumin seed
3 tablespoons olive oil

Preparation

Simmer peas, basil and bay leaf in heavy sauce pan, covered partially, until peas are tender (about 35 min.)

Meanwhile, sauté onion and cumin seed in a heavy skillet over moderately high heat until golden brown.

Discard bay leaf. In a blender, puree in batches until just smooth and transfer to a bowl. Stir in onion mixture and salt and pepper to taste.

I make this with Vegetable broth, so can be a totally vegan soup. No ham bone needed.
