  • 1 head garlic, chopped
  • 1/2 hot red or green pepper, seeded and minced
  • 1 bunch fresh cilantro, finely chopped
  • 1 teaspoon cumin seeds, toasted and ground
  • 1/2 cup olive oil
  • vinegar(optional)

In a skillet over medium-high heat, lightly toast the cumin seeds until fragrant.

Place the toasted cumin seeds in a mortar and grind them with a pestle until powdered.

Add the chopped garlic, finely chopped cilantro, seeded and minced pepper, and a little salt to the mortar. Continue to pound and mix these ingredients thoroughly with the pestle.

Pour in the olive oil, vinegar to taste, and a little cold water into the mortar. Mix well with the pestle until combined.
