Peanut Butter Chocolate Balls

Ingredients

1 1/2 cups Graham cracker crumbs
1 1/2 cups Flaked coconut
1 1/2 cups Peanuts or pecans chopped
1 cup Butter or margarine melted
16 ounces Powdered sugar sifted
12 ounces Crunchy peanut butter
1 teaspoon Vanilla extract
24 ounces Semisweet chocolate morsels
3 tablespoons Shortening

Preparation Time: 0:20Combine first 7 ingredients, stirring well. Shape mixture into 1-inch balls. Combine chocolate morsels and shortening in top of a double boiler; bring water to a boil. Reduce heat to low; cook until chocolate melts. Dip each peanut butter ball into chocolate mixture. Place on wax paper to cool. Store in refrigerator.

Yield: about 9 dozen.

MICROWAVE DIRECTIONS: Combine first 7 ingredients, stirring well. Shape mixture into 1-inch balls. Combine chocolate morsels and shortening in a 1-1/2-quart bowl; microwave at MEDIUM (50%% power) for 5 to 6 minutes or until chocolate is softened; stir well. Dip each peanut butter ball into chocolate mixture. Place on wax paper to cool. Store in refrigerator.

NOTE: Peanut Butter Chocolate Balls may be frozen in an airtight container for later use. Remove balls from freezer 1 hour before serving.
