Crab Meat Bisque

Melt butter; add onions, scallions, parsley, mushrooms and saute until soft about 5 minutes in saucepan. Heat 2 tablespoons butter, stir in flour, add milk, cook until thickened. Stir in salt, pepper, Tabasco, vegetables, and half and half. Bring to a boil and add crab meat. Simmer uncovered 5 minutes. Just before serving add sherry.
