Raspberry Balsamic Vinaigrette
Ingredients
1/3 cup balsamic vinegar
2 tablespoons water
4 teaspoons raspberry preserves
1/4 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon finely chopped shallot
2/3 cup extra-virgin olive oil
Preparation

Whisk together all ingredients except for oil, until well combined.

Slowly drizzle in the oil, whisking constantly, until the mixture is completely combined.

Store dressing in a covered container at room temperature for up to 5 days or in the refrigerator for up to 3 weeks.
