Great Grandma's Pineapple Upside-Down Cake
Ingredients
1/2 Cup butter
1 Cup brown sugar
1 # 2 can sliced pineapple
2 Tbsp large whole pecans
1 cup sifted cake flour
1 tsp baking powder
1/8 tsp salt
3 eggs, separated
1 Cup granulated sugar
5 Tbsp pineapple juice

Melt butter in a large baking pan (I use my cast iron skillet). Spread brown sugar evenly in pan & arrange pineapple slices on sugar, filling in spaces with pecans. Sift flour, baking powder & salt together. Beat egg yolks until light, adding sugar gradually; add pineapple juice and sifted flour; fold in stiffly beaten egg whites. Pour batter over pineapple. Bake in moderate oven (375 F) 30 - 35 minutes. Turn upside down on cake plate. Serve with whipped cream if desired.

I found this recipe in my Great Grandmother's Cookbook. The book is so old that the pages are yellowed & it has no cover. It talks of "Ice Boxes" and all sorts of interesting facts from years gone by. She may be gone, but I have one of her treasures. I used to make this for Bake Sales at our Church when I was in Jr High & High School more then 30 years ago. I hope you enjoy this as much as I have enjoyed the memories!
