Homemade Ginger-Ale

Ingredients

2/3 cup SUGAR (YOU CAN ADD UP TO 1 CUP TO TASTE)
1 cup WATER
1 tablespoon LEMON JUICE

Preparation

Grate the ginger root coarsely into a bowl. Add the sugar, and stir to combine. Let sit for at least 15 minutes- but up to an houri is preferable.

Pour the ginger mixture into a saucepan and add the water.

Bring to a boil, then reduce heat and simmer for 30 minutes.

Remove from heat and let the mixture cool to room temperature.

Strain the mixture through a fine sieve into a bottle or jar. Add the lemon juice and stir. Chill the mixture until ready to use.

To serve. Add about a 1/4 of the ginger syrup to a large glass filled about 1/2 way with ice. Top with sparkling water and serve cold.

Just in time for summer, this refreshing and spicy beverage will keep you coming back for more. It’s delicious and you can add as much or as little sugar as you want.
