Tasty Chicken Satay

Ingredients
4 skinless boneless breast portions
Marinade
1 inch piece finely grated ginger root
2 teaspoons Thai Fish Sauce
2 tablespoons light soy sauce
satay sauce
6 tablespoons crunchy peanut butter
1 red chili, seeded and finely chopped
juice of one lime
4 tablespoons coconut milk
Preparation

Make the satay sauce. Put all ingredients into the food processor and blend til smooth. Check seasoning. Add more lime or salt if needed. Cover and set aside.

Slice chicken breasts into 4 long strips each.

Serve immediately with satay sauce.

This was my first time making any sort of Thai food. I was shocked at how easy it was. It was a huge hit, and my family was upset that I didn't make more!
