Goat In Salmorejo Sauce

Ingredients

1 kilogram Goat Meat
8 cloves of Garlic
1 teaspoon cumin
1 teaspoon Dried Oregano
75 milliliters White Wine
25 milliliters Balsamic Vinegar
75 milliliters Veg Oil
1 teaspoon Dried Thyme
20 milliliters Water

Preparation

Cut the goat meat into size bite pieces

Peel the garlic

Pound the garlic,cumin,oregano in a mortar until blended

Place mixture into a non aluminium container

Add the oil,vinegar,wine,thyme and bay leaf mix well

Add the meat, make sure all the meat is well coated.

Leave to marinate at room temperature over night

Next day place in a deep non aluminium frying pan

Add water

Bring to the boil

Then simmer on a low heat until meat is tender.

About

I live in a little village on the Island of Tenerife, goat is a very popular dish here on the Island. One of my neighbours gave me this recipe. I have tried it, it reaches all expectations.
The boiling part is more like frying on a low heat, either way just do it very slowly so it tenderises the meat. Bit hard to give a time as it depends on the meat. You just seem to know when it's done.
