Mushroom, Onion and Seitan Stir-Fry
Ingredients
1 1/2 tablespoons olive oil
2 large onions, quartered and sliced
2 mediums garlic cloves, minced
10 ounces button or cremini mushrooms, up to 12 oz, thinly sliced
1 pound marinated seitan, cut into bite-size chunks
1 cup frozen baby green peas, thawed
1/4 cup bottled stir-fry sauce, or to taste
1/4 teaspoon freshly ground pepper

This is an excellent choice for big appetites and a warming dish for early winter days. Seitan a tasty food made of wheat gluten, is available in natural food stores MEAL PLAN: Before starting the stir-fry, make some quick-cooking brown rice. Serve with steamed broccoli florets.
