Pesto Potatoes

Ingredients

2 pounds small red potato
1/2 cup pesto
freshly ground pepper
2 tablespoons chopped chives
2 garlic, cloves, chopped
2 cups fresh basil, leaves
1/4 cup pine nuts
1/2 cup olive oil
salt, to taste
pepper, to taste

Preparation

Prepare pesto (see recipe).

Scrub potatoes and cut in half.

Combine with pesto and salt and pepper.

Wrap in one or 2 layers of heavy foil and grill for 10-12 minutes on each side until tender.

Pesto:Place garlic, basil, pine nuts and olive oil in food processor. Process until smooth.

Stir in Parmesan and salt and pepper.
