Oven-Fried Chicken

Ingredients

1 3-pound whole fryer, cut into pieces

Preparation

Roll chicken pieces in flour mixed with salt and pepper. Shake off excess flour. In a large cast-iron skillet, over medium heat, heat oil. Add chicken pieces and fry until golden brown, 10-15 minutes. Cover skillet and transfer to preheated 325F degree oven and let bake for about 35-40 minutes until tender. Meat will fall off the bone.
