Healthy Stuffed Mushrooms

This recipe was entered in The Foodista Best of Food Blogs Cookbook contest, a compilation of the world’s best food blogs which was published in Fall 2010.

Ingredients

1/4 cup olive oil
cup half whole wheat bread crumbs
1 teaspoon each basil, and oregano
3/4 cup water
salt and pepper to taste

Preparation

Clean mushrooms, and remove stems

Chop finely and saute in 1T olive oil with garlic about 5-6 minutes until tender

Combine all ingredients together, and stuff into mushrooms

Bake at 375 for about 20 minutes until mushrooms cook through

Serve immediately and enjoy!

I recently made these stuffed mushrooms as an appetizer for a friend who came over for dinner. She actually thought they came from a box! I guess that’s a good thing? Stuffed mushrooms are a super easy and healthy appetizer and make an impressive dish for your guests. Enjoy!
