Christmas Kale

Ingredients

1 bunch organic green kale, chopped
1 bunch organic red kale, chopped
Olive oil
1/4 cup pine nuts

Preparation

Heat skillet until hot

Toast pine nuts until fragrant (move around so as not to burn)

Add some olive oil and garlic – saute for about 1 minute

Add kale and saute until wilted (about 4-5 minutes)

Add cranberries and saute for another 1-2 minutes

This dish is not only gorgeous, but it’s SO healthy for you. Chock full of good vitamins. You can add crushed red chili flakes, a bit of nutmeg, unsweetened cranberries, dried cherries, whatever you desire.
