Batter-Fried Fish

Ingredients

pound flour
4 teaspoons salt
2 pints buttermilk
2 teaspoons Tabasco brand Pepper S
Fish pieces - (scallops, shrimp, etc.)

Preparation

Combine flour and salt; toss fish until well coated. Combine buttermilk, Tabasco brand Pepper Sauce and baking soda; dip floured fish and dust again in flour.

Heat fat in deep-fat fryer to 350 degrees. Fry fish, 15 minutes for small pieces, 20 minutes for large; drain on paper.
