Ever Ready Muffins

Ingredients
5 c.s all-purpose flour
1 1/2 tbsp.s pumpkin pie spice
4 beaten eggs
2 tbsp.s vanilla
4 tbsp.s Oat Bran (opt.)
2 c.s granulated sugar
5 tsp.s baking soda
2 tsp.s salt
1/2 c. melted shortening
1 qt. buttermilk
Preparation

Mix cereal, sugar, flour, soda, spice and salt. Add eggs, shortening, butter, vanilla and buttermilk. Mix well and store in covered container in refrigerator. Fill enough muffin tins 2/3 full as you need at a time. Bake in preheated 400 degree oven for 15 to 20 minutes. Batter will keep in refrigerator for 6 weeks. Makes 60 muffins.
