Sorrel Pesto

Ingredients

2 cups chopped fresh sorrel, ribs removed
cup packed fresh parsley leaves
2 garlic cloves, roughly chopped
1/4 cup pine nuts, toasted
1/2 teaspoon salt
1/4 cup olive oil

In a food processor or blender puree the sorrel, the parsley, the garlic,

The Parmesan, the pine nuts and the oil, transfer the pesto to a jar, cover, and refirgerate.

About

Use on pasta as you would a traditional pesto made with basil. Goes especially well with seafood, such as a pasta dish made with shrimp, scallops, or squid because of the sour, almost lemony flavor of sorrel.
