- 1 box tiny noodles (12 ounce)
- 2 cups water
- 7 cans sauerkraut juice (14 ounce)
- 1 package white button mushrooms (8 ounce)
- 1 package dried shiitake mushrooms (4 ounce)
- 1 package dried oyster mushrooms (4 ounce)
- 1/4 cup butter
- 1/2 cup flour
Instructions
Step 1
Remove dried mushrooms from packages and soak them in water to re-hydrate.
Step 2
Wash button mushrooms and slice them slightly thick. Slice the re-hydrated mushrooms similarly.
Step 3
Pour the sauerkraut juice and water into a large pot. Add all mushrooms (button and re-hydrated). Bring the mixture to a boil, then reduce heat and simmer for a minimum of two hours (or longer for deeper flavor).
Step 4
Cook pasta until al-dente, then drain and set aside.
Step 5
After the soup has simmered for at least two hours, prepare the roux. Melt the butter in a small skillet. Add the flour and cook, stirring constantly, until the mixture thickens and achieves a blond color. Stir the roux into the simmering soup.
Step 6
To serve, place cooked pasta in individual serving bowls. Ladle the hot soup over the noodles.
