Red Snapper A L'orange

Ingredients

2 pounds red snapper fillets
3 tablespoons butter, melted
1/2 cup frozen orange juice concentrate
2 teaspoons zest of orange
1 teaspoon salt
dash of nutmeg
freshly ground pepper to taste watercress and orange slices

Preparation

Butter a 9 x 13 inch baking dish.

Place fish skin side down in baking dish.

Combine juice concentrate, orange peel, salt, nutmeg, and pepper and pour over fish.

Bake for 25 minutes.

Serve on a bed of watercress garnished with orange slices.
