The Farming Wife's Carrot Marmalade
Ingredients
4 carrots
4 lemons
2 oranges
6 cups sugar
3 ounces fruit pectin
Preparation

Shred carrots

Grate lemon and orange peels and remove pith

Slice lemons and oranges 1/8 inch thick

Bring carrots and fruit to a rolling boil and boil for 2 full minutes

Stir in pectin and boil 2 minutes more, stirring the whole time.

Fill 1/2 pint jars and process for 5 minutes in a boiling water canner
