Skillet fruitcake

Ingredients

300 grams fruit, fresh (seasonal fruit) or canned
2 tablespoons butter
1 tablespoon sugar
100 grams flour.
60 grams semolina
100 grams sugar
7 grams dried yeast
100 milliliters water
2 tablespoons icing sugar

Preparation

Slice fresh fruit however you desire.

Melt butter in a 23cm diameter pan, add the fruit and sprinkle with a spoonful of sugar. Cook until tender. (If you use.canned fruit, cooking is not necessary).

Meanwhile, combine flour, semolina, sugar and yeast in a separate bowl.

Add eggs, mix and combine.

Gradually add water and mix until a semi liquid and smooth batter is obtained..

Pour evenly the batter over the fruit in a pan. Cook covered over medium heat about 10 minutes.

When the cake is puffed and looks done, turn it out with the aid of a plate (like a tortilla).

Return the cake into the pan, uncooked side to the bottom. Sprinkle with 1 tablespoon icing sugar, cover and cook over medium heat additional 10-15mnutes.

Check for doneness with a toothpick (if it is dry and clean, remove the cake from the heat).

Let it cool and then turn out onto a plate, sprinkle with icing sugar.
