Coconut Rice and Beans

Ingredients

3/4 cup coconut milk
1 teaspoon cumin powder
1 1/2 tablespoons olive oil
2 tablespoons . chopped cilantro (optional)

Preparation

Saute the vegetables in the olive oil without letting them dry out. Add the beans, cumin s, chicken bouillon, add the coconut milk and mix everything. After two or three minutes stir in the cooked rice and mix. Serve while warm. You can add some chopped cilantro to serve.
