Noodles With Herb Sauce

Ingredients

45 grams wide ribbon noodles
2 clv garlic peeled
20 grams pine nuts chopped
3 tablespoons chopped basil
1 tablespoon chopped marjoram
1 tablespoon olive oil
1 tablespoon warm water
100 grams ricotta cheese
2 tablespoons single cream
25 grams butter

Preparation

Cook the noodles in plenty of boiling salted water for about 10 minutes until tender.

Meanwhile put the garlic and pine nuts into a mortar and crush them.

Transfer them to a bowl and mix with the basil and marjoram.

Stir in the oil and water and season with salt.

Mash the cheese with a fork add to the herb mixture with the cream.

Stir until smooth.

Drain the noodles return them to the pan and toss in the butter.

Place on a hot dish and serve with the herb sauce poured over.
