Egg Salad

Ingredients
4 pieces hard cooked eggs, chopped
1/2 cup mayonnaise
1 teaspoon salt
2 teaspoons Dijon mustard
Dash freshly ground pepper
1 tablespoon chopped dill

In small bowl combine eggs, mayonnaise, mustard, dill, and pepper.

Cover and chill.

About
Egg salad is good on it's own, served over lettuce, or in a sandwhich. It's a great way to use up leftover Easter eggs. You can also customize with additional ingredients, such as:
Chopped ham
Chopped celery
Diced onions: red, green, yellow, or white
Paprika
A pinch of cayenne pepper or a dash of hot sauce for a bit of kick
I use celary, and dill pickel, and onions, to enhance the flavor I grate these items and let the juice fall into the bowl as well.
