Cut the apple into wedges and remove the seeds.Juice the apple wedges with the cranberries and beet. Pour the combined juice into a blender or food processor and add the banana, yogurt and ice cubes. Blend until smooth.

Pour the mixture into a tall glass and serve it garnished with the mint sprig.

Note: You can make this drink as bright red as you wish by adding a little more beet.
