Patzaria (Beets & Walnuts In Yogurt Sauce)
Ingredients
2 pounds beets, trimmed
2 garlic cloves, pressed
1 cup plain yogurt
1/2 cup finely chopped walnuts
1/2 cup olive oil
Preparation

Boil beets until tender; drain well.

Transfer to a bowl and stir in the vinegar.

Blend yogurt, oil and garlic in another bowl.

Season with salt. Stir into beets. (Can be prepared 1 day ahead up to this point, covered, and refrigerated.)

Fold in the ½ cup of walnuts.

Cover and refrigerate 30 minutes.
