Healthy doughnuts

Ingredients

Doughnut:
• 2 cups of oat flour ( I used Vanilla flavour)
• 1 spoonful of honey
• 2 eggs
• 1 teaspoon baking powder
• 1/2 cup rice milk and coconut flavour ( You can use any milk you like)
• 1/2 cup strawberry puree ( few strawberries and pulse them)
• Chop a few strawberries
• 1 tablespoons olive oil
Glazing:
• 2-4 tablespoons strawberry puree,
• 2-4 tablespoons of strawberry yogurt
• 1 square of white chocolate melted

Preparation

Preparation is pretty simple, I am not into complicated things. Mix all the doughnut ingredients together, pop in your doughnut shaped tin & cook at 160ºC for 15-20 minutes

Once cooked, unmold and let them cool. Prepare your glaze in the meantime, by adding the strawberry puree, the strawberry yogurt and the melted square of white chocolate.

Once they are cool, top with the glazing & keep in the fridge.
