Prawns Omelette 虾仁炒蛋

Ingredients
200 grams Prawns- shelled, cleaned and cut cubes (not too small)
and season with:
1/4 teaspoon Light soy sauce
1/4 teaspoon Sesame oil
1 Onion- shredded
Preparation

Pour some oil in a non-stick pan and fry onion still soft.

Add prawns and fry till just cooked.

Spread out onion and prawns evenly, then pour beaten eggs over it.

Swirl pan around to spread the omelette evenly.

When the eggs have set about 2-3 mins, flip the eggs over and cook for another 2-3 mins.
