Smoked Fish and A Super Quick Dinner

Ingredients

2 large potatoes very thinly sliced
3 large cloves or garlic, crushed
1 large onion sliced in two
Lemon wedges for garnish

Preparation

Cook Potatoes in the oil until translucent

Add Onions and Garlic

Cook for another 10 minutes

Add Fish (chopped) and peas and cook throughout

Serve with lemon wedges

About

I found some Smoked haddock in the supermarket for half price today!
I quickly grabbed as it look super fresh and you should never pass up a food bargain deal.
By the way, what kind of smoked fish do you have where you live?

When I got home, though, I realised my pantry was nearly bare and I didn't have a lot I could work on this fish with.
Now most Brits will boil smoked fish in milk, fry it or make fish pie sauce with it. The most adventurous will throw it in a soup. Oh and there's also Kedgeree.
I didn't fancy any of those options.

Upon re-exploring my pantry, I found some farmer's market garlic, onions and potatoes.
Any normal fish wouldn't be able to hold its flavour against such competitors as garlics and onion, Salted cod however can, as it has a unique flavour.
And so does smoked fish-hey presto a quick and delicious dinner recipe for under £5 or $7.

My son loved it, it was a great way of getting him to eat some fish!

A key ingredient here is also a good quality extra olive oil for added flavour as well as the lemon juice at the end!
