Vegan Sushi with Avocado, Bell Pepper and Cucumber

Ingredients

For the Rice
2 cups short-grain rice
4 cups water
For the Sushi
1 avocado (sliced)
1⁄2 cucumber (sliced)
8 sheets nori dried seaweed sheet
1 small red bell pepper (sliced)
For the Dip
8 tbsps soy sauce
4 teaspoons wasabi

Preparation

Boil the rice in the water until soft for about 30 minutes.

Use a bamboo mat and put the seaweed on it and add half a cup rice and the vegetables.

The bamboo mat makes it easy to create a nice sushi roll.

Slice the sushi roll into pieces and serve with wasabi and soy sauce.
